Dinner at Mum and Dad’s, 04/11/2005

I went to my folks’ for dinner last night. Uncle Martin and Auntie Pat were over, as well as my younger sister’s boyfriend, and Mum, thinking that I might be sick of cooking, invited me over at the last minute. Auntie Pat and Uncle Martin really love chilli and spicy food, so Mum cooked a number of spicy/chilli dishes to have with rice. Because my sister and her boyfriend don’t really like chilli, Mum also roasted a small chicken in the turbo broiler. Because I’m a piggy, I ate some of everything!

This was fried red throat emperor topped with chilli sauce. The fish was meaty and tender.

The vegetable dish was fried kang kong with sambal belacan. Some people find eating kang kong difficult because it’s kind of slimy (Jac, for example, struggles to swallow it), but I love it.

Of course, there had to be a meat dish. Mum made beef rendang.Those are bits of lemon grass you can see there in the curry.

The roast chicken was beautiful, really moist, juicy and tender. It had been flavoured with soy and honey (see that gorgeous colour?). The skin was damned tasty, and between the three main chicken eaters just about all of it was devoured. Mum cooked little alfoil-wrapped parcels of potato and carrot with the chicken.

The vegetables were very simple, but perfectly cooked and went well with the chicken.
