Of course, if I’m cooking for myself, it’s not too long before SPAM makes an appearance. Four slices of SPAM, which I fry until they are browned with crispy edges on both sides. While the SPAM is frying, I break a couple of eggs into a bowl, add a sprinkle of white pepper and a drizzle of soy sauce and beat it all together. When the SPAM is crisp I pour the eggs in. You can guess how this story ends by the picture. This time I served it with rice and half a can of baked beans. This is one of my favourite comfort meals.
