Mid-week roast dinner

On Wednesday night we had roast lamb for dinner. Jac loves making roast dinners, with meat and lots of roasted vegetables – this is of course most excellent, as I love eating roast dinners. On this occasion, Jac flavoured the lamb with rosemary and garlic.

We had roasted butternut pumpkin, sweet potato, carrot, whole onions and of course potatoes, fluffy on the inside and crispy on the outside.

Of course, there was more meat on that roast than a mere dinner’s worth! We both agreed we should’ve been more organised and invited a friend or two over for dinner. But the extra meat didn’t go to waste – Jac cooked something yummy with the rest of the meat last night. That post is soon to come.
