A couple of dinners

Monday night: Jac made a casserole using chicken sausages, turkey bacon, onions, a tin of Heinz Big Red tomato soup and a tin of Heinz Baked Beans. She served it with fluffy mashed potato, peas and corn kernels and baked polenta topped with smokey BBQ sauce. The polenta looked good but we both agreed it needed more seasoning. The casserole was fantastic – definitely something she’ll make again! I reckon it would’ve been even more fantastic with roughly chopped chunks of fresh tomato, left to cook in the bean gravy. Mmmmm.

Tuesday night: We had a hoisin and chilli chicken and vegetable (carrots, cauliflower, cabbage and capsicum) noodle stir fry. The chicken was sliced thigh fillet pieces, which we’d been marinating in a bag in the freezer for a few weeks. Yummy!
