Mango ice cream

Last weekend, Jac also made mango ice cream. We bought a tray of mangoes so Jac could put her plan into action – to make ice cream and freeze the rest of the mango flesh ready for smoothies.

We got ice cream recipe from her Margaret Fulton’s Book of Ices and Desserts (published 1983 by Octopus Books, London, p.48).

It turned out a glorious strong yellow.

The instruction to take the ice cream out of the freezer and leave it in the fridge to soften is definitely necessary – it’s absolutely rock solid if you try to scoop it straight from the freezer. The ice cream was creamy and REALLY mangoey! If you don’t really like mango, you’ll hate this ice cream, but if you love mango, you’ll be in heaven. Not difficult to make (perfect for those of us who don’t own an ice cream maker), and lovely and refreshing for these scorching summer days we’ve been enjoying suffering putting up with!
