“What was available” fried rice (hah!)

It’s been a while since I made one of my variations of SPAM fried rice. On Friday night last week I felt compelled to cook up a batch. On this occasion: cubes of SPAM fried in the wok until their edges were browned and crisp, sliced snow peas (my first preference for the vegies in fried rice is green beans, but we didn’t have any), a small onion, chopped, and lots and lots of garlic – two decent-sized cloves, very roughly chopped. I flavoured the rice with the usual – a splash of soy sauce, a generous drizzle of oyster sauce and freshly cracked black pepper. To finish, I made a well in the centre of the fried rice in the wok and broke an egg into it, scrambled the egg until cooked, then mixed it all through. Jac isn’t so keen on SPAM fried rice – so this was a meal I cooked, ate and enjoyed on my own.
