Monday night’s been fish and salad (or vegies) night for a while now. Last week’s Monday dinner was panfried fillets of red emperor with two salads. First, a pre-packed Greek-style salad (complete with mixed greens, red onion, olives and cubed feta cheese), to which Jac added sliced fresh cherry tomatoes. Second, a potato salad Jac made with potatoes (duh!), hard-boiled eggs, green peas and chives. The potato salad dressing was simply Kraft Miracle Whip. Jac fried the fish in a pan with a little butter – it was moist and delicious.
