Asian-style egg and vegie scramble

Jac went out early last Sunday morning to visit her friend who lives in the hills. I stayed home and made myself some breakfast.

I chopped up mushrooms, the last of the snow peas and a clove of garlic. I beat a couple of eggs in a bowl with some white pepper and soy sauce. I fried the vegies and garlic first, then added the egg when the vegies were mostly done. When the egg was cooked, breakfast was ready!

It would’ve been delicious with rice, but I was too hungry to faff about cooking rice. I had this ready to eat in less than ten minutes. :)
