Wednesday bento

I was sure Jac would really like the tomato and cheese “sandwiches” on skewers that I’d made for my lunch on Tuesday, so I made her a couple as part of Wednesday’s lunch. She said she’d love a sandwich for lunch, and so I made her a sausage, cos lettuce and corn relish sandwich. The sausage was a lamb and rosemary one leftover from Monday night’s dinner. I threw in a hard boiled egg which I seasoned with salt and pepper, and a couple of hoisin and garlic chicken wingettes. Jac suggested we chop the wings in half to make them “wingettes” so they’d fit into the lunch boxes, which was a very good idea.

As Jac loves her greens, I included a little cos lettuce on the skewers with the baby roma tomato, cheese and sweet pickles, and placed them on a bed of more lettuce. We have loads of lettuce in the garden ready to eat, which is great!

Sandwiches are one of Jac’s absolute favourite foods. She needs and craves bread like I do rice. I think if she was forced to live on nothing but sandwiches for the rest of her life, she’d be quite content (as long as she had a wide range of sandwich fillings to choose from). I really like making sandwiches for her. I love thinking about different combinations of fillings that she’ll enjoy.

As Wednesday is hockey training night, I packed Jac something extra to eat – some fried rice.

My second bento box arrived on Tuesday, and I just had to use it. Top: hoisin chicken wingettes on snow pea sprouts, fried rice. Bottom: corn kernels with chopped sweet pickles, sauteed mushrooms with dried thyme and roma tomatoes on baby cos lettuce. This bento box is microwavable with the lids off, and includes a removable food divider – very handy. The little crunchy pieces of sweet pickle made the corn even sweeter. It was almost like a dessert. :)

This bento box comes with a pair of bright yellow chopsticks, but I left them at home on this occasion. I could’ve used the now-empty area under the top lid for something else, but I felt that I had enough food for my lunch. :)
