Here’s a recent variation on my old favourite of SPAM and egg with rice and baked beans. As I fried the SPAM in the pan, I also fried mushrooms, which I’d sliced in half. When SPAM and mushrooms were nicely browned, I poured into the pan a couple of eggs that I’d beaten with soy sauce and white pepper.
Note: this meal was eaten before Jac went away – I haven’t cracked open any tins of SPAM just yet. :)
