Spicy chicken stew

Jac started out thinking she’d cook a chicken curry, but the dish ended up more like a spicy chicken stew, with chicken thigh pieces, potato, carrot, beans and onion. The chicken stock-based gravy flavoured with curry powder tasted fantastic, especially soaked into the rice! I loved it and told Jac she should make it again. Many times. :D I think my favourite thing in any stew is the potatoes. I can never get enough potatoes in a stew. I always say to Jac “However many potatoes you planned to use – add another big one!”
