Dinner: Hamburgers with cheese and bacon, potato wedges and oven-baked corn

Just before new year, my sister Juji and her boyfriend Jay came over for a homemade hamburger dinner. I was really looking forward to this – we hadn’t made burgers at home in a while.

Juji made big beef patties, which we cooked in the electric frying pan. I added a slice of Swiss cheese on my pattie; the others each added a couple of slices of good old Kraft Singles. While the beef patties were cooking in this pan, Jac fried the bacon on the stove.

Pretty soon, we had an explosion of bubbling melted cheese. Looks so wrong but tastes so right!

When the meat was done, we each grabbed a burger bun and added a cheesy juicy beef pattie (including the gooey melted cheese scraped from the pan), bacon, and freshly sliced tomato and lettuce. I lightly buttered my bun and added a little mayonnaise and tomato sauce. I must admit I thought about making this burger even more delicious and calorific by adding a fried egg (with a soft gooey yolk of course!) and a juicy pineapple ring… but didn’t. This was pretty damn tasty as it was. My burger with “the lot” would also include sweet caramelised fried onions.

Years ago there was a limited time “Swiss” burger at Hungry Jack’s featuring beef pattie, Swiss cheese and sauteed mushrooms – that was pretty wonderful too and I’d love it if they brought it back.

I love a burger with fries! We had duck fat left over in the tub we’d bought for Boxing day lunch, so Jac made duck fat oven-roasted potato wedges. We dipped them in Neil Perry Fresh aioli.

As well as the homemade burger patties, Juji brought along silver foil-wrapped parcels of corn on the cob, flavoured with garlic Tabasco, chilli, paprika and butter which we baked in the oven with the potato wedges. Sweet and spicy juicy corn kernels popping under my teeth – fantastic!

And as we ate our dinner, we talked and watched TV. Quite appropriately, the show was Best Food Ever. :D
