A post before bed…

I stayed home again today and continued working on my chapter. For lunch, I made a quick salad of spinach, tomatoes and mushrooms, with a handful of Jac’s homemade multigrain croutons and a piece of leftover fish from Monday night’s dinner. I tossed the spinach, tomatoes and mushrooms in Paul Newman’s Ranch Dressing. I zapped the fish in the microwave before roughly chopping it into pieces and serving it up on the lightly dressed salad. I would’ve preferred if the tomatoes were cherry or grape tomatoes, and the salad would’ve been even better with some shaved parmesan, but it tasted pretty good. Simple and messy but yummy.

I was considering working at uni tomorrow just for a change of scenery, but with a forecast minimum of 2 degrees Celcius, I think I’ll stay home! Heheh.
