I made us a sandwich bento for lunch last Monday. We had a barbecue chook to use up, so I made two variations of chicken and mayo mix. The sandwiches were (from left to right, and then, the sandwich that’s on top):
- Chicken and mayo mix #1 (chicken, mayo, tomato sauce, sundried tomato mustard) with sliced cucumber
- Chicken and mayo mix #2 (chicken, mayo, wholegrain mustard, black pepper) with rocket
- Panfried turkey SPAM, sliced cucumber and St Dalfour cranberry with blueberry preserve
- Havarti cheese with Beerenberg green tomato pickle, which I bought recently from IGA supermarket in East Perth.
I filled the space in the corner of Jac’s Tupperware Sandwich Keeper with a Rafaello chocolate; I filled mine with a few cherry tomatoes.
And this was the note I wrote for Jac:
