Fried fish, salad and potatoes

This was a very quick and simple weeknight dinner, prepared by Jac:

  • fish fillets, covered with seasoned flour (plain flour mixed with salt and pepper) then panfried until they were just crispy on the outside
  • potatoes thickly sliced with their skins still on, steamed so they were cooked in the middle but still firm and held their shape, then browned in the same pan as the fish
  • a salad of mixed greens, cucumber and tomato

And just before serving, she sprinkled a little chopped parsley over the fish – a very light sprinkle for me as I’m not a big fan of parsley.
