Saturday night dinner
On Saturday, we still had some KFC leftover from Friday night’s dinner to finish, but Jac was in a cooking mood and wanted to do something more than merely heating up pieces of chicken (admittedly, I would’ve just eaten the chicken cold, straight out of the fridge – who here likes cold KFC? and cold pizza? Me me me!).
She created a simple two-course meal for us using bits and pieces from the fridge and pantry. First for me, french toast served with cherry tomatoes, sliced cucumber and a blob of aioli on a bed of lettuce.
Fresh tomatoes, big or small, are so sweet and lovely to eat.
Jac made the french toast savoury rather than sweet – in the egg batter was a little garlic salt. It was great!
Jac made herself french toast sandwiches, with ham and cheese filling.
For her second course, she assembled a plate of salad (lettuce, cucumber, tomato, KFC coleslaw) and pickles (pickled artichoke heart, bread-and-butter dill pickles) with a piece of KFC.
I had KFC with KFC coleslaw and bread-and-butter pickles and more lettuce. Jac had one piece of chicken, I had three.
And thus, all the KFC was eaten.
