Return of Christmas turkey

I wrote this post a few weeks ago and didn’t publish it (no particular reason, just didn’t!). Jac cooked a casserole in the electric frypan we got from my parents for Christmas – she used Christmas turkey thigh roll, retrieved from the freezer, thawed and cut into cubes. She added vegetables – carrots, celery, green beans, peas, and onions, and a tin of mushrooms in butter sauce as well as sliced fresh mushrooms.

She served the turkey casserole with garlic mashed potatoes. Our plastic potato masher broke, and so she used the handheld electric mixer to “mash” the potatoes. They turned out really creamy, really nice, I thought! The casserole was delicious, really mushroomy! Leftovers in the freezer for another couple of days too!
