This was a delicious dinner Jac cooked – chicken and mushroom casserole, made with chicken pieces, sliced potatoes and fresh button mushrooms, all baked in the oven.
She served the casserole with corn kernels and peas. She’d left the chicken on the bone, and it was tender and flavoursome.
I kept going back to the dish and eating more potatoes and mushrooms and gravy. I enjoyed the leftovers over the next couple of days. Sorry, no recipe – Jac just made this one up as she went along.
