I really wanted a SPAM sandwich. Just SPAM, fried to crispy on the outside, with fresh thickly sliced soft white bread. No lettuce, no mayonnaise, no butter on the bread, nothing else whatsoever. It was so good, exactly what I wanted. One of life’s simple pleasures. What’s your simple pleasure?

On the night Jac was due home from Melbourne, my dinner was my old favourite, fried SPAM and egg with rice, baked beans and corn kernels.
I’ve posted SPAM and eggs with baked beans and rice many times before, but this was the first time I cooked and ate this in our new house. So I felt it had to be documented. That’s all. :D
