Dinner and bento – SPAM, celery salt chicken and vegetables

I ate rice with SPAM, vegetables (green beans, grape tomatoes, potatoes, mushrooms) and garlic, cooked in the wok with oyster sauce. I sliced the garlic into long shards – see the two long pieces of garlic on top, in the photo?

After dinner, I panfried a couple of chicken thighs, which I’d rubbed with white pepper and celery salt (yes, more celery salt chicken – I really love it!) for my next day’s bento. Jac rang from NSW as the chicken sizzled in the pan, and we chatted as it cooked.

For bento the next day, I placed a couple of handfuls of mixed salad greens in my lunch box. With chopsticks, I then placed sliced celery salt chicken and a mixture of leftover bits, and pieces – SPAM cubes, mushroom, grape tomatoes, baby corn and potato.

This was one of my favourite bento lunches to date, for taste, texture and colour. I could’ve eaten this hot or cold; I chose to eat it cold, like a salad.
