Saturday night dinner

When Jac asked me what I felt like for dinner last night, I told her I’d like some sort of chicken dish, cooked with onions, garlic and mushrooms, in a sauce made with chicken stock and possibly white wine and herbs – no cream. I thought it might be nice to have green beans in the dish, and fresh tomatoes cooked in the sauce too, which would break down and give it sweetness. And I’d love to have this served with garlic mashed potatoes. Jac was only to pleased to rustle up something that fit my description – plus something extra.

Another delicious chicken dinner

The chicken was delicious (I have leftovers in the fridge waiting to be eaten!). The tomatoes did break down and make the sauce really sweet and tasty. Jac used bouquet garni as well as fresh parsley and lots of garlic. Yes yes, I am a garlic fiend and can’t get enough.

This was a surprise creation: steamed sweet potatoes and carrots, tossed in Lee Kum Kee plum sauce and leftover fresh cut chillies in soy sauce from a previous takeaway Chinese meal. Jac said she would’ve used honey but couldn’t find any – which is where the plum sauce came in. This was soooo delicious! As the Tellytubbies would say, “AGAIN AGAIN!”

I always think how lucky I am that Jac loves cooking (and cooking for me).
