Friday night SPAM dinner

My quick and easy Friday night dinner. I roughly up half a big brown onion and a couple of plump garlic cloves, which I fried in the wok until fragrant but not too browned. I then added cubed SPAM and stir-fried until the SPAM’s edges were nicely browned and crisp. I then added two bunches worth of chopped bok choy and cracked fresh black pepper, stirring through until the bok choy lost its immediate raw “green” taste but the stems were still crunchy, and then last of all I added leftover cold cooked rice (there wasn’t much left on this occasion – usually I’d like more than what you can see in the photo), a little soy sauce and oyster sauce. I tossed the mixture until the rice was nice and brown, coated by the sauces and warmed through – the dish was then ready to serve.
