Dinners at home
Last Sunday night, Jac cooked up a wonderful chicken and mushroom dish with chicken thigh meat and a combination of tinned champignons, fresh button mushrooms and rehydrated dried shitake mushrooms. Flavoured with mushroom soy sauce, chilli and chicken stock, it was a chicken and mushroom lover’s delight.
She also stir-fried some vegies – carrot, green beans and baby corn. Before serving, she sprinkled some deep fried shallots on top (we have a jar of these, purchased from an saian supermarket).
I couldn’t get enough of the chicken and mushroom dish. I ate the leftovers with rice for breakfast two mornings in a row! Jac took some to work for her lunch, and still there was more left. The last of it is in a ziplock bag in the freezer, ready for a future chicken and mushroom craving. :)
26/02/2008. Snapper fillets, seasoned with garlic salt and black pepper, topped with a little butter and grilled, then served with salad. In the salad was some blanched broccoli and baby corn.
28/02/2008. I finished work late, and with Jac at hockey training I knew I wouldn’t be bothered cooking dinner for myself, so I grabbed some sushi on my way home. First, a pack of cooked tuna mayo sushi, with cucumber and lettuce as well as the tuna.
I also got a pack of teriyaki chicken sushi. I sat in front of the telly and ate my sushi, with Pixel prowling around in search of something fishy she could evidently smell.
29/02/2008. Jac was in a cooking mood, and the most delicious smells greeted me as I arrived home. She’d baked a batch of cauliflower and broccoli cheese.
In a frying pan, she’d sauteed mushrooms and onions, over which she’d sprinkled chopped fresh parsley.

I couldn’t wait to dig into the broccoli cauliflower cheese – I couldn’t fit even a spoonful on my plate, which was piled high with delicious things.

Jac had fried up some butterflied pork steaks, which she topped with the mushrooms and onions. With this she served blanched green beans, mashed potato and oven baked corn on the cob and pumpkin and carrots.
With my side dish of broccoli and cauliflower cheese, it was a fantastic meal!
