Friday night curry

Another dish I tend to cook when Jac’s away is green curry chicken. I cooked this last Friday night for my dinner, using green curry paste from a jar (I used Valcom brand curry paste, which is made in Thailand), coconut milk, a little sugar and fish sauce (as per the instructions on the jar), chicken thigh meat, zucchini, potato and frozen peas. Just like my recent chicken and vegetable dish with no name, I peeled and pre-cooked the potato using a potato microwaver. This dinner was very easy to prepare, and extremely tasty.
