Rice noodles with pork and vegetables, topped with pickled green chillies

We had some noodles leftover from laksa night, so Jac made a two-noodle stir-fry with carrots, onions, cabbage, garlic and egg. We had a chunk of roast pork in the freezer which Jac defrosted, sliced up and threw into the stir-fry. I couldn’t believe how tender the roast pork was! I know I couldn’t believe it, because I kept going on and on about how tender it was. Initially, Jac was chuffed, but I think by the time I finished my dinner she was sick of me raving on about that pork! I ate a big bowl of noodles topped with lots of green pickled chillies. I got through all the chilli you see in the photo by the time I was halfway through the noodles, so I just got more chilli out of the jar. :D The noodles looked like a sloppy mess but they were yummy! I enjoyed the leftovers for breakfast the next morning. Yes, with more pickled chillies.
