Craptastic week

It’s been an exhausting week. With morning and afternoon exam supervisions almost every day (including a couple of alternative exams that were over 4 hours long), I haven’t had much time or energy to do much else. I won’t go into details, but things have been less organised this time around, making everything much more stressful for us worker-bees as well as the students. I would love to tell you all about it to gain your sympathy and understanding, but you know the rule about not writing about work! Anyway, unfortunately I have another craptastic week coming up.

But the good news is that I have only one chapter left to write for my thesis. I am aiming to have that chapter completed by the end of August. When this has been done, I will have completed the Introduction and 6 chapters. Then it will be editing, tidying, fixing etc., followed by writing the conclusion and bibliography/reference list. Things are well on track for the submission of my thesis in mid-Feb next year, fingers crossed. I don’t have any plans to take on more work around the university next semester (in fact, I have promised my supervisor I will ask her advice before agreeing to any work opportunity that may present itself from now on until I’ve finished the thesis), so hopefully I will be able to be fully focused on the thesis.

Of course, busy as it’s been, I’ve been eating (duh!). Okay, here goes:

On Monday night (or maybe it was last Sunday night, I can’t remember, and it’s not important) Jac fried up pork chipolatas, potato and mushrooms for dinner. She made us each a bowl of salad too. Those of you concerned about my vegetable intake will be pleased to know I ate everything you see in the photo below.

The chipolatas were beautiful with lots of smokey barbecue sauce. The potatoes were simply sliced and panfried. Jac removed the stalks from the mushrooms and then cooked them in the same pan as the chipolatas. Because she knows how much I love mushrooms and hate to see any part of them wasted, she finely chopped the stalks and put them in my salad (you should be able to see them in the photo above).

Another meal we had this week was crunchy potato-coated fish filets (don’t get excited – they came this way, frozen), which Jac served with ovenbaked tomatoes, potato wedges and steamed vegetables (green beans, carrots and zucchini). I think she is determined to show you all that she can successfully get me to eat my vegies. The tomatoes fell apart but were sweet and soft and yummy.

And on Wednesday morning I had a steak and mushroom pie for breakfast. It was really delicious. The meat gravy was really tasty and loaded with mushrooms. I’ll definitely have that again!
