Baking on a Sunday arvo
While Jac was at hockey this afternoon, I did a little baking. I made up some of my triple chocolate muffin mix, which is now in the freezer. I’ll take it out of the freezer on Tuesday morning and leave it in the fridge to thaw out so it’ll be ready to be made into mini muffins on Tuesday evening – we’re having morning tea on Wednesday for someone who is leaving the organisation, and I thought a batch of my triple choc muffins topped with mocha icing (and some with chopped roasted peanuts) would go down very well. Ever since I brought some in for my birthday, my workmates have been saying how much they enjoyed them and how they’d love it if I made more. Well, they’ll be very happy on Wednesday! :)
After making up the choc muffin mix, I decided to use up our overripe bananas and make a banana and orange loaf, which I’ve made before (see this post). Jac will enjoy this for morning tea tomorrow. Although I haven’t had dinner yet, I might just have to have a slice of this while it’s still warm – yum!

EDIT: Mmmmm, yummy.

EDIT, 4 Sept: I brought some in to work yesterday for my workmates – it went down very well. Not exactly a cure for Mondayitis but I reckon it may have helped a little.
