I didn’t take lunch to work last Thursday, but I made sandwiches for Jac. Jac has said her favourite bento lunches are always the ones that feature sandwiches.
I packed Jac four different sandwiches, along with some leftover KFC coleslaw (in a silicone cupcake mould), lettuce, baby roma tomatoes, a sliced mushroom and strawberries.
These were the sandwich fillings:
- KFC chicken mix (chicken, mayonnaise, dijon mustard and wholegrain mustard) and lettuce
- Swiss cheese, dill pickles and piccalilly (also spelled piccalilli; our jar of Koeleman brand piccalilly spells it with a “y”)
- KFC mix, cucumber and St Dalfour blueberry with cranberry preserve
- Kaya and margarine.
The KFC, cucumber and jam sandwich was a bit of an experiment, but I was pretty confident Jac would like it as she’s a big fan of fruity sauces with meat (turkey and cranberry, pork and apple, and so on). She gave it the thumbs up. She said she ate the sandwiches in the order I packed them, which is the order in which I’ve just described them – a rough progression from savoury to sweet.
