Yes, I know, I’ve featured Japanese curry before. But I wanted to share this photo with you. For some reason, the vegetables in the thick curry sauce – the carrot and potato cubes – looked so good, so abundant, to me. This curry really sang out “EAT ME!”

A weeknight dinner made with the help of a jar of Chicken Tonight – chicken stroganoff, which Jac served with garlic mashed potatoes, steamed green beans and corn on the cob. Jac used boneless skinless chicken thigh pieces, and added onions and mushrooms to the sauce. It was really good.
